Conversely, I have sometimes enjoyed long, interesting correspondence with someone, but when we met "in person", we somehow found it hard to find things to talk about.

i've run into this one too... there are people i collaborate with from whom i'm geographically separated... i'm in contact with some of these people almost daily, and then i cross paths with them in person once a year or two. i find it's hard to find things to talk about only because, we've been "talking" all along! the inclination is to say, "so what's new?" because we haven't *seen* one another in a year or more. but of course, we already know what's new, we're in constant contact, we just can't bring ourselves to believe that.
